Other than pinging the server, how would you check whether a mail server is available?

I assume by "pinging" you mean testing port 25.
That does it for a particular machine, but does not mean that machine is
the MTA for itself. What you want to do is use dig (or nslookup)
to look for the MX record for an domain and see which machines are listed.
Refer to the man pages for dig & nslookup.
